A big congrats to Adam Melak from the UK, who won a regional version of the SoMoved UNSWEETENED Challenge in June! Part of the challenge was to experiment with cooking new recipes and Adam was one of our winners for that part of the challenge, as well, for this recipe for Lamb Mince Stuffed Peppers. Macronutrient Balance: 32g Protein / 31g Fat / 19g Carbohydrates - this recipe makes 2 servings/2 peppers (photo is of 1/4 serving)
Ingredients:
2 orange peppers- cut in half and seeded
10 oz minced lamb
1Tbsp tomato paste
2 oz crumbled feta
3 oz finely chopped red onion
2 garlic cloves - minced
1/2 tsp basil
1/2 tsp oregano
1/8 tsp cayenne
Olive oil cooking spray
Salt and Pepper to taste
Instructions:
Spray a medium sized pan with olive oil cooking spray and sauté onions and garlic for 2 minutes.
Add in the lamb and cook until browned.
Add tomato paste and seasoning and cook on low until the onions soften completely.
Add half of the crumbled feta.
Preheat oven to 425 degrees F. Evenly fill each half pepper with the mince mix.
Top with the remaining crumbled feta and bake in the oven on a cookie sheet or baking dish for 20 minutes.
Serve warm with a side of veggies or salad!
