Avocado Salad


Avocados are a healthy source of fat and while we might think of them as something that gets added to salad or a sandwich or perhaps just your traditional guac, why not make it its own salad? This is a really delicious citrusy avocado salad that we like to pair as a side dish to our steak that you can find on the blog. If you want to add a little bit of greens to the mix, toss it on a bed of watercress. Yum!


Macronutrient Balance: 4g Protein / 22g Fat / 19g Carbohydrates - this makes 2 servings


Ingredients:

  • 2 medium sized avocados

  • 4 oz diced roma tomato (approximately 2 medium roma tomatoes)

  • 1 Tbsp freshly chopped cilantro

  • Juice of 1 whole lime

  • 1 tsp cumin

  • 1/2 tsp cayenne pepper

  • salt to taste

Instructions:

  1. Cut avocados in half and remove the pit. While the avocado is still in the shell, cut 4 lines down length wise in each half, and 4 lines across. This will dice the avocado without it getting messy. Spoon the diced avocado out and add to a bowl.

  2. Add tomato, cilantro, cumin, cayenne and salt and then squeeze the lime juice over and mix gently so as not to mash the avocado too much and leave it in whole diced pieces. Serve with a delicious steak!
