Buffalo Cauliflower Bites

Looking for another crowd pleaser for this Super Bowl season? We‘ve got you covered with these really simple buffalo cauliflower bites that are quick and easy to make. Make sure to serve them hot! 


Macronutrient Balance: 10g Protein / 15g Fat / 9g Carbohydrates - this makes 4 (4.5oz) servings 


Ingredients:

  • 1 head of cauliflower - approx 1.2lbs with leaves removed

  • 2 eggs

  • 1 oz grated pecorino romano cheese

  • 1/2 cup almond flour

  • 1 cup buffalo wing sauce

  • 1 Tbsp butter

  • 1/2 tsp garlic powder 

  • 1/2 tsp black pepper

  • dried parsley for garnish 


Instructions:

  1. Preheat oven to 400 degrees F

  2. Whisk together 2 eggs. In a separate bowl, mix almond flour, garlic powder and black pepper.

  3. Cut cauliflower into florets and dip in the egg, shake off excess egg and dip in flour mixture and place on a baking sheet with one sheet of parchment paper. Repeat until all of the cauliflower florets are breaded. Bake cauliflower for 20-25 minutes. 

  4. While cauliflower is baking, melt butter and mix with buffalo sauce. 

  5. Remove the cauliflower from the oven and gently toss each floret in buffalo sauce and place back on the baking sheet. 

  6. Set oven to broil and place the cauliflower back on the oven for an additional 3 minutes. 

  7. Remove cauliflower from the oven and plate. Drizzle with any leftover buffalo sauce and garnish with dried parsley.
