Cathy's Overnight Oats


Cathy Russell, a UK participant in our UNSWEETENED Challenge, crafted her own version of overnight oats that won her part of the challenge - to have it prepped in our SoMoved Test Kitchen for our Food For Thought blog. We did our own little spin off of Cathy's overnight oats, making a few adjustments based on the ingredients that we could find here in the U.S. but tried to stay true to her original recipe. Thanks Cathy for the inspiration!



Macronutrient Balance: 33g Protein / 19g Fat / 54g Carbohydrates - this recipe makes 1 serving


Ingredients:

  • 8 oz 2% plain greek yogurt

  • 50 grams oats (a little over 1/2 cup)

  • 1/8 cup blueberries

  • 1/8 cup blackberries

  • 1/8 cup raspberries

  • 1/4 cup nut mix


Instructions:

  1. Layer ingredients in a bowl and refrigerate overnight.

  2. Mix when ready to eat.
