Collard Greens


Greens are good any time of year! They go well in the winter when you need a warm side dish, or in the summer when you need something to go with some bbq. This is an easy and quick dish to throw together, but does require a few hours of cooking. 


Serving size: This recipe makes 6 (8 oz) servings


Macronutrient Balance: 13g Protein / 10g Fat / 10g Carbohydrate


Ingredients: 

  • 8 oz smoked ham hock

  • 1 giant bag chopped collard greens or chop yourself :-)

  • 4 cups chicken broth

  • 1 Tbsp olive oil

  • 4 garlic cloves - minced

  • 1 medium yellow onion - diced

  • 2 tsp apple cider vinegar

  • 1 tsp chili flakes/cayenne - optional

  • salt and pepper to taste

Instructions:

  1. Turn stove to medium heat, and in a large pot and add oil. Sauté onion for 2-3 minutes until translucent. Add in garlic and cook for an additional minute. 

  2. Add greens in bunches until they start to wilt down. Add in broth a little bit at a time to help cook them down. 

  3. Add ham hock, vinegar, chili flakes/cayenne, and salt and pepper to taste. 

  4. Cover and cook on low for 4 hours. This can also be transferred to a crockpot at this point and cooked on low for 4-6 hours.
