This is definitely a favorite of ours, and worth a bit of effort to pull together. The combination of flavors is mouthwatering and perfect for a summer time, or anytime meal! Made with cauliflower rice, we get some great veg in place of starchy rice, without sacrificing flavor! If you're thinking of ditching the mango salsa and plantains because its just too many steps, don't! They're just TOO good and really complete this dish! There are a lot of different components to this dish and it would be a great meal to have as leftovers, so we definitely recommend doubling or tripling the recipe so you have enough for leftovers!
Serving size: This recipe makes one serving with 4 oz chicken breast, 3 oz cauliflower rice, 2 oz black beans, 1 oz plantains, and 1/3 cup mango salsa

Ingredients:
Chicken:
4 oz boneless skinless chicken breast - cubed
1 garlic clove - minced 1 tsp olive oil
1 tsp chili powder
1 tsp orange zest
1/2 orange - juiced
1/2 lime - juiced
1/2 tsp oregano
1/4 tsp salt
Black Beans:
2 oz canned black beans - drained
2 tbsp water
1/2 tsp salt
1/2 tsp oregano
1/4 tsp cumin
Cilantro-Lime Cauliflower Rice:
3 oz cauliflower rice
1/2 lime - juiced
1/8 cup cilantro- finely chopped
Mango Salsa:
1/4 cup frozen mango - finely chopped
0.5 oz red onion - finely minced
1/4 lime - juiced
1/8 cup cilantro - finely chopped
1/8 tsp salt
Plantains:
1 oz plantains
Instructions: Chicken:
In a mixing bowl, combine all the ingredients to make the chicken marinade except for the tsp of olive oil
Add chicken to marinade and allow to sit for at least 30 minutes or overnight in the fridge.
Heat a large skillet and add 1 tsp of olive oil over medium heat. once the pan is hot add the chicken without the extra marinade and cook until browned all over (roughly 10-12 minutes). Once the chicken is cooked add the remaining marinade to the skillet and cook until the sauce has reduced slightly, about 2-3 minutes
Black Beans:
In a small pan add all of the ingredients for the black beans and let simmer for 5 minutes. Remove from heat.
Cilantro Lime Cauliflower Rice:
Follow instructions on the frozen bag of cauliflower rice on how to heat up. We used the Trader Joe's brand which requires an easy few minutes in the microwave.
Toss cauliflower rice with lime juice and cilantro.
Mango Salsa:
In a small bowl, toss chopped mango, red onion and cilantro together
Squeeze lime juice and season with salt
Plantains:
Heat oven to 400 degrees F
Peal the plantain and cut into slices with a thin-medium thickness
Line a cookie sheet with a piece of foil and place plantain slices on top
Bake for 15 minutes or until soft
Once all of the ingredients have been prepped separately, add all of the elements together and enjoy!
