Ready for a really delicious side to our Pork Chile Verde or our Chicken Kabobs? Here come some tasty Cuban style black beans that give you just enough seasoning to stand out from the typical basic bean dish. Not made completely from scratch (we skipped the step of soaking dried beans), but it's still great and simple to make.
Macronutrient Balance: 6g Protein / 2g Fat / 19g Carbohydrates - this makes 4 servings (approximately 4oz each)
Ingredients:
1 can black beans, do not drain
5 oz finely diced yellow onion
3 garlic cloves minced
1/8 cup of finely chopped cilantro
2 tsp olive oil
1/3 cup water
1 tsp salt
1/4 tsp black pepper
Instructions:
In a medium saucepan, heat olive oil and sauté onion and garlic until softened.
Add black beans, water, salt and pepper. Bring to a boil and then bring the heat down to low and let simmer uncovered for 15 minutes.
Add cilantro halfway through and stir.
Serve hot or warm.
