Flank Steak Summer Salad

Ever had a salad that had so much flavor that it didn't need any dressing? Well, this is it! The mix of ingredients makes this a killer salad that doesn't need a single addition. 

Serving size: This recipe makes 1 serving Macronutrient Balance: 44g Protein / 24g Fat / 23g Carbohydrates 

Ingredients: 

  • 6 oz grilled flank steak - chopped into bite sized pieces (checkout our Grilled Flank Steak recipe on the blog)

  • 1 small ear of corn (about 1/2 cup)

  • 2 cups spring mix salad

  • 1 cup baby spinach and arugula mix

  • 3 oz cherry tomatoes - cut in half

  • 3 oz cucumber - cut into thin moons

  • 2 oz orange or yellow bell pepper

  • 2 Tbsp crumbled blue cheese

  • 1 tsp sea salt

  • 1 tsp crushed peppercorn medley 

Instructions:

  1. Cut the corn kernels off of the ear of corn and bring a small pan to medium heat. Add in the corn kernels and stir for 3 minutes. Fresh corn does not need to cook for long, no oil or seasoning needed.

  2. Using a large salad bowl, add the spring mix and spinach and arugula as the base and top with cucumber, tomato, pepper, steak, blue cheese and corn.

  3. Sprinkle sea salt and crushed peppercorn medley and enjoy!
