Halloumi, Peach and Strawberry Salad


This might just be a new favorite go-to summer salad. It's so fresh and light and still hits all those macros making it a perfectly yummy and balanced dish. It packs in the protein and fat without meat. And the light homemade citrus dressing is perfect to top it off! Enjoy it al-fresco!


Macronutrient Balance: 22g Protein / 29g Fat / 23g Carbohydrates - this makes 1 serving



Ingredients:

  • 3 oz Halloumi cheese - (3 pieces, each 1 oz)

  • 2.5 cups spring/herb mix salad

  • 3 strawberries - quartered

  • 1 white peach  - cut into half moons

  • 1/4 of an orange - juiced

  • 1 tsp olive oil

  • 1/8 tsp nutmeg

  • Olive oil cooking spray 

  • Crushed black peppercorn to taste

Instructions: 

  1. Bring skillet to medium/high heat and spray with olive oil cooking spray. Add halloumi and let pan sear about 3 minutes on one side and 1.5 minutes on the other side or until lightly crisped and browned. 

  2. On a plate or bowl add your greens, strawberries and peaches, and top with cooked halloumi. 

  3. In a small ramekin, mix olive oil, orange juice and nutmeg together and top over your salad.

  4. Add some crushed black peppercorn for a tiny peppery kick.
