We drew from those recipes and selected some to feature on our Food for Thought Blog, and so here we bring you "Mary's Chicken Olé," from Mary O'Connell! Serving size: This recipe makes 6 (4oz) servings of chicken with 1 oz of sauce
Macronutrient Balance: 26g Protein / 7g Fat / 4g Carbohydrates
Ingredients:
24 oz chicken breast, divided into 4 oz pieces
1/2 cup hot chunky salsa
1/4 c Dijon mustard
2 Tbsp fresh lime juice
2 Tbsp butter
Instructions:
Combine salsa, mustard, and lime juice in a large bowl.
Add chicken and mix together.
Cover and marinate in fridge for at least 30 minutes.
When ready to cook, heat large skillet on medium/high heat and melt butter until it just begins to foam.
Brush off as much of the marinade as you can from pieces of chicken, and cook for 5 minutes on one side.
Flip chicken and cook for an additional 5 minutes, and cover with foil for the last 5 minutes to allow the chicken to steam and moisten.
Once chicken is done cooking, add the marinade into the skillet with chicken and cover and cook on low/medium heat for an additional two minutes.
Serve with a side dish to compliment this really easy and delicious protein.
