Mediterranean Dill Tomato Salad


Tomatoes are perfect for salads and this one features them as the star of the show. Herbs and spices and dressings that are healthy options give this salad just the right amount of zing and can complement lots of meat dishes! Give it a go!


Serving Size: Recipe makes three, 5 oz servings

Ingredients:

  • 12 oz on-the-vine tomatoes - sliced into wedges

  • juice of 1/2 lemon

  • 2 tsp white wine vinegar

  • 1 oz red onion - thinly sliced into half moons 

  • 2 cloves of garlic - minced

  • 1 Tbsp olive oil

  • 1/2 cup fresh dill, chopped 

  • 2 tsp sumac

  • salt and pepper to taste

Instructions:

  1. In a large salad or mixing bowl, add the tomatoes, onions, fresh herbs and garlic. Add the sumac, salt and a generous sprinkle of freshly ground pepper.

  2. Add the lemon juice, white wine vinegar, and olive oil. Toss well to combine. Taste and adjust the salt to your liking.

  3. Transfer to a serving bowl or dish and serve immediately.
