Mexican Picadillo


This is a classic meat and potato dish that's got so much flavor and just the right amount of spices! 


Serving size: This recipe makes 8 (8.4 oz) servings 

Macronutrient Balance: 25g Protein / 10g Fat / 12g Carbohydrates 

Ingredients:  2 lbs 93% lean ground beef 1 medium yellow onion - diced 2 red bell peppers - diced 2 garlic cloves - minced 2 medium Roma tomatoes - diced 1 5.3 oz russet potato - diced 1/4 cup chopped cilantro (about 1 bunch) 1/2 cup water 1 Tbsp olive oil 2 tsp salt 2 tsp cumin 1 tsp black pepper

Instructions:

  1. In a large pot, turn stove to medium heat and add oil. Add onions and saute for 2 minutes. Add the minced garlic and cook for an additional minute. 

  2. Add in the ground beef and cook until browned, continuing to break the meat up so it's finely minced as it cooks. 

  3. Add in peppers, tomatoes, potatoes, water, and seasoning and turn on low and cook for 20 minutes or until potatoes are fork tender. Halfway through the 20 minutes, add in the cilantro. 

  4. Serve with some cauliflower rice!

Note: If you're looking for some additional fat, adding in 5 kalamata olives is just the perfect touch to this recipe and it goes great with the dish!
