Simple and easy to balance with any veggie sides that fit your plan, this is a delicious grilled pork rib chop that is juicy and satisfying. We like these grilled over some smoky wood chips, but they can be pan-seared or even baked. Get the protein you need in your diet, and mix up your meals!
Macronutrient Balance: 53g Protein / 25g Fat / 1g Carbohydrate (this recipe makes 2, 7-ounce, servings)
Ingredients:
2, 7-oz Berkshire Pork Rib Chops (not including bone weight for Frenched bone-in rib chops as pictured)
Marinade:
1.5 T Stone-ground Mustard
1T Fresh Rosemary
1.5 T Extra Virgin Olive Oil
1/2 t Sea Salt
1 t Minced Garlic
Instructions:
Combine Marinade ingredients in sealable bag or container. Add the 2 rib chops and coat.
Marinate refrigerated from 1 hour up to overnight, flipping rib chops to re-coat.
Prepare grill with wood chips if desired, and grill about 15 minutes each side (depending upon thickness of chops). Aim for internal temperature of the meat to reach 145 degrees F.
Let rest for 5 mins, and enjoy with your favorite sides. Pictured here are 1/2 c steamed haricot verts (plain) and 2.5 oz sweet potatoes roasted with olive oil and sea salt, making this meal 53g Protein / 26g Fat / 20g Carbohydrate. (43% P/40%F/17%C)
