Here's a beautiful, fresh, homemade pico. Its ingredients are so simple but it’s full of flavor and great with so many dishes. Add jalapeño if you like for some heat- as this recipe doesn’t have it (you're welcome non-spicy folks), but it does have the freshness that we think goes with so many meats and other dishes.
Macronutrient Balance: 1g Protein / 0g Fat / 9g Carbohydrates - this makes 2 (4.75oz) servings
Ingredients:
2 Roma tomatoes- finely diced
1/2 lemon- juice
0.5 oz red onion- finely minced
1/4 cup finely chopped cilantro
1 tsp salt
Instructions:
In a small bowl, mix together ingredients and it’s ready to serve. You can refrigerate for a few hours if you want to make this ahead of time.
