Pulled Pork Breakfast Hash


You don't have to go out to brunch to order the fancy breakfast hash! Here's a killer recipe that's restaurant worthy, and that you can make right at home! 


Macronutrient Balance: 30g Protein / 26g Fat / 25g Carbohydrates - this makes 1 serving


Ingredients:

  • 1 serving of our Oven Roasted Pulled Pork

  • 1 egg

  • 1 serving diced frozen hashbrown potatoes (approx 2/3 cup)

  • 1.5 oz avocado 

  • 1 tsp olive oil

  • 1 tsp butter

  • salt and pepper to taste


Instructions:

  1. In a medium skillet, add olive oil and potatoes and let cook for about 10 minutes until potatoes are golden with a slight crisp. Stirring occasionally and season with salt at the very end. Add potatoes to a plate. 

  2. Add one serving of pulled pork to the pan - no oil necessary - and cook at a medium/high heat until some of the pork is crispy. Add the pork to the potatoes. 

  3. Add 1 tsp of butter to the pan and crack an egg over it. Let the egg cook for about 1-2 minutes (depending on the heat of your pan) until the white part looks fully cooked. Season with a pinch of black pepper. Carefully flip the egg over with a spatula and let cook for an additional 20 seconds. Add the egg on top of the pork and potatoes.

  4. Cut up the avocado and plate on the side of the plate. Sprinkle with a bit of black pepper and eat as-is or serve with your favorite hot sauce.
