Taco Salad


Summer may wind down, but the salads can keep on satisfying. This is another great salad that's packed with flavor and doesn't require any dressing! It's a pretty good balance of macronutrients, too! It uses our delicious and simple recipes for taco meat and taco seasoning from right here on our Food For Thought Blog. Yum!


Macronutrient Balance: 47g Protein / 36g Fat / 38g Carbohydrates - this makes 1 serving


Ingredients:

  • 1 serving of simple turkey taco meat (heated)

  • 1 Roma tomato diced (approx. 5oz) - sprinkle with salt

  • 2 Tbsp sour cream

  • 1/4 cup Mexican shredded cheese

  • 2 Tbsp pickled jalapeno slices

  • 1/4 cup corn

  • 1/4 cup black beans

  • 1/2 avocado - (this can be diced or mashed with a squeeze of lemon and a pinch of salt for a different texture)

  • 2.5 oz chopped romaine lettuce

Instructions:

1. Toss or layer all ingredients in a bowl and enjoy!
