Thyme Roasted Heirloom Carrots


As we approach the holiday season, we've got you covered with some some healthy options to go with those main holiday meats. This recipe is the perfect accompaniment to the big bird on Thanksgiving or that prime rib on Christmas Eve. Step away from some of those heavier traditional side dishes and create some new recipe traditions by adding in this delicious veggie.


Macronutrient Balance:  1g Protein / 3g Fat / 8g Carbohydrates - this makes 5 servings


Ingredients:

  • 1 lb of petite heirloom/multicolored carrots

  • 1 tsp dried thyme

  • 1 Tbsp olive oil

  • 1/2 tsp kosher salt

Instructions:

  1. Preheat oven to 400 degrees.

  2. On a baking sheet, spread out the carrots so they aren't over crowded, and drizzle with olive oil, thyme and salt and evenly coat them. 

  3. Cook carrots for 20 minutes, moving around halfway through. These will still have a nice crunch to them, so if you want them softer cook them for an additional 5 minutes.

  4. Serve right away or warm.
