Ingredients:
24 oz chicken breasts, chopped into pieces
24 ounces Organic Chicken Stock
Optional: 1 1/2 cups cooked white Cannellini beans (Makes one serving's macros 39g Protein / 2g Fat / 16g Carb)
24 Tbsp Salsa Verde
1 Medium Vidalia Onion (or any sweet yellow onion)
4 Tbsp Cumin
1 tsp Cayenne Pepper
.5 Tbsp Smoked Paprika
Topping Ideas for one Serving (not included in macros, but delicious with this)
1/2 Medium Avocado
1 tsp diced red onion
2 Tbsp Cilantro leaves
1 tsp salsa verde
(dairy options might include sour cream or cheese to taste)
Instructions:
Chop raw chicken into bite sized pieces.
Chop vidalia onion.
Throw onions into crockpot, layer chicken chunks on top.
If adding beans, add here. If desired, mash some of the white beans to thicken soup
Add Chicken Stock and Salsa Verde.
Add Spices, stir into broth.
Cook on high in crockpot for 4 hours, or on low for 8 hours.
Your house will smell amazing. :-)
(alternative and quicker option, sautee the onions and the chicken, then add to stock and salsa verde with spices and cook on stovetop for approx 1 hour).
